Dana Jackson’s Pork Roast for singles
Brown the meat in a Dutch oven, then salt it and put a lid on and bake it, adding water if necessary, until very tender (3 hours, usually). The first meal is with a baked potato and vegetable and mustard on the meat. Then it makes many meals for 1 person. Trim off the fat, then make serving size packages of the pork and freeze it. Serving suggestions for quick meals with frozen portions:
